All roasts and blends are fresh-roasted to order and available in regular or decaf. The Swiss Water decaffeination Process is a certified organic process using Café Mam beans. Decaffeinated beans roast slightly darker than regular beans. The taste of decaf and regular beans is the same.

Most coffee drinkers are not aware that Europeans buy a higher grade of coffee than Americans do. European grade coffee beans cost more and have half the defects (2% vs. 4%) of American grade beans. A defective bean is off-color, sour, broken or the wrong size. Bad beans burn faster than the rest of the batch, producing a bitter taste. Coffee connoisseurs agree that European grade coffee has a richer, smoother taste, with no bitter bite.

There are two main varieties of coffee trees, Arabica and Robusta. Arabica beans are more flavorful and contain less caffeine than Robusta. The best-flavored Arabica beans come from the highest altitudes (3,000 feet up to the frost zone). Royal Blue Organics' imports only European grade, certified organic, high altitude ("altura"), Arabica beans grown by indigenous farmers, producing the best cup of coffee around.

Roasts:

French  is the darkest roast available, with oily beans that are almost black, but not burned. It is very rich tasting with a smoky finish. French roast has less caffeine and a lower acid content.

Italian  is our original roast; a roast well suited to Café Mam beans. It is rich and dark in flavor with a bold, complete taste.
 
Medium  is the class of roasts that has brought oil to the surface of the bean. Our Medium is slightly lighter than Italian, with a sheen of oil and a clean, fruity taste.

Light Roast  is light brown, with no oil on the surface of the bean. Light roast has the highest caffeine content and an herbal, flowery aftertaste.
 
Blends:

Breakfast Blend is a blend of equal parts Medium and Light roasts, offering a mellow body with plenty of caffeine to start your day.
 
Tango  is an equal combination of French and Italian. Tango blends the smoky finish from the French with the full-bodied richness of the Italian. It takes two to tango!
 
Viennese  is a blend of three parts Medium and one part French. It has a rich flavor with a mellow sweetness, and is a good one to try with a home espresso machine.

Mochó  is a three to two blend of Medium and Italian. It is fruity with a good body and clean aftertaste. Mochó is excellent served with food.
 
Trinity Blend  is blended with equal parts French, Italian & Medium roasts, offering a perfect balance of smoky richness and mellow sweetness.
 
Royal Espresso  is a blend which varies with each harvest to create the very best flavor for your home espresso machine.
 
Othello Blend  is 1 part French, 1 part Italian, and 2 parts Light. It is full-bodied with a mellow, herbal aftertaste.

Café Mam Coffee Storage
Coffee loses its freshness through contact with oxygen. For the freshest cup, store your coffee in an air-tight container. Any coffee you will be keeping longer than two weeks can be stored air-tight in the freezer for up to two months.

We do not use plasticized aluminum valve-lock back or laminated paper/poly bags because they are not recyclable.

MENDENHALL GLACIER


The picture at the top right is beautiful Mendenhall Glacier near Juneau, Alaska. Since the visitor center was built in the 1960s, the glacier now begins more than a mile from where it began then. It is only one of the many glaciers throughout the earth that is melting at accelerated rates because of global warming, created at least in part by human impact on the climate.
